Looking for a new dish to add to your holiday menu? Timothy Downs, executive chef at Knoebel Events, shows us how to make wild rice pilaf two ways.
Ingredients:
- Olive oil
- 2 large sweet potatoes
- 3 cups wild rice
- 9 cups broth of your choice
- 2 tablespoon butter
- 1/2 cup sliced sage
- 1 tablespoon minced garlic
- 1 cup or more chopped praline pecans
- 1 cup dried cranberries
- 1 cup dried apricots, cut into quarters
- 2-3 acorn squash, cut in half and deseeded
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1/4 teaspoon celery salt or celery seed
