Last quarter, the Daniels College of Business School of Hotel, Restaurant & Tourism Management adopted a new name. Its namesake is Ferdinand “Fritz” Knoebel, who was a prominent player in Denver foodservice distribution industry before his passing in 2005. Ferdinand’s widow, Betty donated $17.5 million to the school in his honor. Their gift (one of the largest in the school’s history) will establish the Knoebel Center for the Study of Aging and continue support of the Fritz Knoebel School of Hospitality Management.

My fiancée and I are seeking a venue for our wedding reception on a Saturday in August or September of 2015. We have already decided upon our church in Centennial for the ceremony, but we would like to choose a site in the next few weeks to host our evening reception, with dinner, of around 100 people. What options do you have for reception only? If you have in-house catering, are the packages set per person plus a site fee or is the site fee included? If you do not have in-house catering, must we use a preferred vendor or may we pick one of our own choosing? Are there reduced prices for children if you offer dinner? Do you have specified time blocks for reception only? Does that include set-up and take down? For alcohol, is it in-house only or may we have outside liquor/bartenders? Do you offer a hosted bar, cash bar, etc? Do your packages include a champagne toast and if not, how much extra would that be? Do you have an in-house or preferred baker that must be used for wedding cakes? Are there any restrictions on outside wedding cakes? Do you have any standard centerpieces/decorations or are all decorations the responsibility of the hosts? Do your prices include tables, chairs, dishes and/or linens? Is there a dance floor or are set-up/rental/fees required? Are tax and service charges included in your quoted prices or would we expect to add 20%+ onto the final bill? Do you require we use your in-house DJ or may we use our own. Do you already have a sound system or should we account for all equipment? Do you have an in-house or preferred photographer? Do you offer any sort of overnight guest accommodations for the bride and groom or do you have any special/negotiated rates for inns nearby? For other guests? What puts your site above the competition? I’m sure I’m forgetting some questions, but these are our main considerations. We are looking to make a decision fairly quick and we appreciate your time.
